Crockpot Chicken Enchilada Tacos

I don't really care for chicken enchiladas. Yeah, I said it. But I think I found a happy medium. Enter crockpot chicken enchilada tacos.

What You'll Need:
1 lb chicken breasts
1 can enchilada sauce
1 cup Mexican blend of cheese
1/4 cup green onion
2 tbl spns. taco seasoning

I saw this recipe and decided to adapt it for the crock pot. Because the crock pot rules. I love knowing that I have dinner slowly cooking all day, and then bam, it's ready when I'm ready. So this is pretty easy. One of those, dump everything in and let it go type recipes. I put the chicken breasts in the bottom of the crock pot and then poured the taco seasoning over them. I bought one of those taco seasoning packets and used about half of it. Then pour in the enchilada sauce. Cook on high for about 4 hours. Shred the chicken with a fork and then add the cheese and green onions. Serve with tortillas and rice. Yum!

 To make this recipe even healthier, try using plain Greek yogurt instead of sour cream, use low fat cheese, and substitute whole wheat or corn tortillas instead of the regular white flour tortillas. 
Pretty easy huh?! And it's delicious. My hubby requests it all the time. Hope you like it!
